Ingredients:

Serves 4.

1 / 2 bunch fresh basil

1 red onion

6 salad tomatoes

1 sprig of parsley

2 tablespoons black olives

5 anchovy fillets

1 tablespoon lemon juice

5 tablespoons of extra virgin olive oil

Salt and pepper to taste


Preparation:

Desalted, boned anchovies and crumble.

Peel the onion and cut into thin slices.

In a bowl, prepare a sauce with lemon juice, freshly ground pepper, salt and extra virgin olive oil.

Emulsified everything well and add the anchovy sauce and onion, stir everything together and let marinate for 2 hours.

Wash the tomatoes, Privatel peel, cut into rounds and then removed the seeds and cut again into quarters.

Hours Spread the tomatoes in a bowl and sprinkle with chopped parsley and basil, salt and pepper and then topped with the sauce of onions and anchovies.

Add, now, black olives stir the whole carefully and serve.
